  • 2 slices FLAVIS Hearty Brown Bread
  • 1 1/2 oz (40 g) pepper
  • 1 1/2 oz (40 g) zucchini
  • 1 1/2 oz (40 g) roma tomatoes
  • 4 fresh basil leaves
  • 1-2 tsp (8 ml) extra virgin olive oil

Method

  1. Cut the zucchini and pepper into cubes, and blanch in unsalted boiling water for 30 seconds. Repeat twice.
  2. Heat the olive oil in a frying pan and gently fry the vegetables for 3 minutes.
  3. Add the cubed tomatoes and season with the fresh basil.
  4. Toast the slices of Hearty Bread in the oven with a drizzle of oil and garnish with the vegetable mixture. Serve hot.

Cook's tip

Give the recipe more flavor by adding chives.
