Apple and cinnamon strudel

  • 1/2 oz (15 g) FLAVIS Crostini
  • 1 tsp (5 g) milk
  • 9 oz (250 g) apples
  • 1 oz (25 g) dried dates
  • 2 dessertspoons granulated sugar
  • 1 1/2 tsp powdered sugar
  • 1/2 tsp (2.5 g) cinnamon
  • 2 1/2 oz (75 g) butter
  • 4 tsp (20 g) cold water
  • ¼ lemon

Method

  1. To prepare the crust, put the Bread Mix, 1 3/4 oz (50 g) butter and the water in a food processor, add salt to taste and pulse until the mixture resembles breadcrumbs. Transfer the mixture to a bowl and mix until the dough is firm and easy to work. Wrap the pastry in cling wrap and leave to rest in the refrigerator for at least two hours.
  2. Roughly crumble the Flavis Crostini and set aside. Peel the apples, cut into quarters and then cut each quarter into 4-6 cubes. Put the cubes in a bowl with a little lemon juice and a dessertspoon of granulated sugar.
  3. Melt the butter in a large saucepan, add the apples, and cook over a medium heat for 5 minutes, stirring every so often. Add the sugar and caramelize for around 4 minutes. Transfer to a bowl, add the cinnamon, and leave to cool. Mix in the dates.
  4. Roll out the pastry on a baking sheet lined with baking parchment. Sprinkle half of the crostini over the pastry, top with the apple mixture, and finish with the remaining crostini. Close the strudel by folding the lower part of the pastry over the filling, then fold over the upper part. Brush the edges with water and seal.
  5. For a glossy, golden finish, brush the top with a little milk. Pierce the ends with a fork.
  6. Bake at 340°F (170°C) for 40 minutes. Remove from the oven and allow to cool, then dust with powdered sugar. Allow to cool before slicing.  

Cook's tip

The raisins and pine nuts in the original recipe have been substituted with dates due to their high protein content. Dried apricots or orange zest can be used instead. The Crostini have been used to replicate the crunchy texture of the pine nuts; the more Crostini are used, the drier the final result will be.
