  • Plain low-fat yogurt 1 cup

  • Walnuts, toasted & chopped 1/4 cup
  • Basil, chiffonade 2 tbsp

  • Romaine lettuce, shredded 2 cups

This fresh and fruity Autumn Waldorf Salad is the perfect hearty salad for Fall. Each bite delivers the right balance of sweet and savory – with a little bit of crunch. Designed with kidney patients in mind, it is also low in protein, sodium, potassium, and phosphorus.

 

Method

  1. Prepare the fruits and vegetables: Dice beets into 1/4" cubes and boil or steam until soft and tender, about 20 minutes. Drain and let cool. Dice celery and apple, chiffonade basil and shred romaine.
  2. Toast the walnuts: Preheat a toaster oven to 350. Spread walnuts evenly on a toaster oven tray and toast until fragrant, about 3 minutes. Keep an eye on them to ensure they don't burn. Chop.
  3. Make the croutons: Finely chop Flavis hearty brown bread into small pieces, about 1/2" in diameter (or process in a food processor until you have small crumbs). In a large skillet, heat 1 tbsp olive oil over medium heat. Add the breadcrumbs and a dash of salt. Stir frequently for 5 minutes or until they start to turn golden brown. Remove from heat.
  4. Make the salad: Whisk yogurt, lemon juice, dijon, basil and remaining 1 tbsp olive oil until combined. Add celery, apple and beet and toss to coat. Divide romaine among two serving bowls to create a lettuce "bed." Spoon beet salad over each "bed" and garnish each with toasted walnuts and bread crumbs.
