Bread and zucchini balls

  • 8 1/2 fl oz (250 ml) sunflower oil

A simple and easy to prepare recipe that guarantees and a tasty second course. The flavor of the zucchini never disappoints

Method

1 Cut the zucchini into small cubes, and blanch in unsalted boiling water for 30 seconds, then dry well on kitchen paper. Cut the bread into cubes.

2 In a saucepan, gently fry the zucchini in the olive oil for 3 minutes. Add the bread cubes and continue to cook gently until the mixture is soft. Add a spoon of water if necessary.

3 Allow to cool, then mix until the ingredients come together. Season with salt, pepper and nutmeg, and form into balls with your hands.

4 Heat the sunflower oil in a frying pan, and fry the balls for 30 seconds, or until they form an outer crust. Serve hot. Cook's tip

You can experience variations replacing the zucchini with other vegetables to taste: spinach, peppers, eggplant, carrots, keeping the same quantities and preparation but... discovering new flavors.
