Ciabatta with spicy tomato and oregano filling

  • 1 1/2 fl oz (50 ml) tomato sauce
  • 1 pinch red pepper flakes
  • 1/2 tsp (2 ml) extra virgin olive oil

Method

  1. Preheat the oven to 360°F (180°C). Slice the bread roll in half horizontally, place on a baking pan, and bake for 3 minutes.
  2. In a bowl, mix the tomato sauce with a pinch of crushed red pepper flakes and a pinch of salt. Remove the bread roll from the oven, leaving the oven on at the same temperature. Fill the roll with the tomato mixture, return it to the oven and bake for 5 minutes. Serve garnished with a drizzle of extra virgin olive oil and fresh oregano.

Cook's tip

You can replace the tomato sauce with a cream of homemade vegetables, simply by boiling and blending the vegetables (zucchini or peppers, for example), then following the same procedure for the sauce.
