  • 1 oz (25 g) FLAVIS Crostini or dry FLAVIS Hearty Bread

  • 1/2 clove garlic
  • 1 egg
  • 1 3/4 fl oz (50 g) extra virgin olive oil
  • 6 fl oz (175 g) peanut oil

Method

1 Peel the eggplants, cut into approximately 1 inch/3 cm cubes, sprinkle with salt and leave to drain in a colander for a couple of hours to release the bitter juices.

2 Finely chop the Flavis Crostini or dry bread and push through a sieve.

3 Rinse the eggplant to remove the salt. Squeeze the cubes without breaking them and dry well. Heat the olive oil in a large, deep frying pan. When hot, sauté the garlic for approximately 3 minutes, then remove.

4 Place the eggplant cubes into the same oil. When all the oil has been absorbed, add a little water, and continue to cook for 10-15 minutes until the eggplant begins to break up. Drain well and leave to cool.

5 In a bowl, mash the eggplant with a fork or use a whisk. Add the egg, a pinch of salt and half the breadcrumbs to obtain a mixture that is soft but not too runny.

6 Dust your hands with breadcrumbs and form the mixture into balls, each weighing around 1 oz/30g. Roll in the breadcrumbs, ensuring they are evenly coated. Heat the vegetable oil in a high saucepan. When the oil is hot, fry the balls two at a time until well-cooked, and drain on kitchen paper.

7 Serve warm or hot.

Cooks's tip

Use a mixture of chopped herbs for this recipe. Oregano, marjoram, thyme, and mint are excellent for adding aroma and freshness to the dish. The balls can also be baked on a sheet of parchment paper in a fan oven at 375°F (190°C). Brush with oil to prevent them from becomingtoo dry. If they do become dry, serve them in a simple sauce of fresh cherry tomatoes and basil.
