Eggplant parmesan

  • 1 1/2 oz (40 g) FLAVIS Grissini
  • 1 medium-sized eggplant
  • 7 fl oz (200 ml) tomato sauce
  • 8 1/2 fl oz (250 ml) sunflower oil
  • 5 fresh basil leaves

Eggplant shines in this nostalgic dish that has also become a favorite of great chefs all over the world

Method

1 Thinly slice the eggplant and blanch in unsalted boiling water for 30 seconds. Repeat twice, then dry the slices well on parchment paper.

2 Crumble the Flavis Grissini using your hands or a mortar and pestle.

3 Heat the oil to boiling and fry the eggplant slices.

4 Cover the base of a foil-lined baking dish with a layer of tomato sauce, and cover with a layer of eggplant slices, followed by another layer of tomato sauce. Top with the basil leaves and a very fine sprinkling of Flavis Grissini. Repeat until all ingredients are used up.

5 Bake at 360°F (180°C) for 10 minutes.

Cook's tip

If you would like, you can also replace the eggplant with zucchini.
