Fusilli with pepper and rosemary cream

  • 6 oz (160 g) FLAVIS Fusilli
  • 7 oz (200 g) red pepper
  • 2 oz (50 g) yellow onion
  • 1 sprig of rosemary
  • 1 oz (30 g) cubed bacon (optional)
  • 1/2 clove garlic
  • 1 tbsp (10 g) extra virgin olive oil
  • Use salt according to your doctor’s advice

A plate of pasta is never just a plate of pasta. Just take two exceptional ingredients like pepper and bacon and then... enjoy your meal!

Method

  1. Peel the onion and wash the pepper, removing the seeds. Roughly chop the rosemary, finely chop the onion and cut the pepper into strips.
  2. In a high saucepan, gently sauté the garlic in the oil. Remove when browned and add the onion and pepper. Cook over a high heat for 3 minutes, then lower the heat and continue cooking for 15 minutes, until the pepper begins to break down. Add a ladleful of water if the vegetables become too dry. Blend the vegetables and set aside.
  3. Heat a frying pan, and dry fry the bacon over a high heat until crispy. Turn off the heat and add the rosemary, draining the excess fat.
  4. Cook the Fusilli in boiling salted water until the pasta has a firm bite (also known as “al dente”). Reserve a ladleful of the cooking water. Drain the pasta and return to the pan. Add the vegetable sauce and cook for a minute or so, adding a drizzle of extra virgin olive oil.
  5. Scatter with the rosemary and crispy bacon. Serve hot.

Cook's tip

The sauce can also be used as a paté, perhaps with the addition of a teaspoon of sugar and one of vinegar just before serving for a sweet and sour touch.
