Ingredients
  • ¼ cup short grain brown rice (dry)
  • 1 teaspoon cilantro, chopped
  • 3 medium broccoli florets
  • ¼ cup shredded red cabbage
  • 2 ounces Beyond Meat ground beef
  • 1 medium scallion, chopped
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon red or white miso
  • 2 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • ¼ carrot, roughly chopped
  • 1 teaspoon sesame seeds, toasted
  • 1 watermelon radish, julienned (for garnish, optional)
Preparation

  1. Cook brown rice in boiling water for 30 minutes, or until tender. Drain if necessary.
  2. Shred red cabbage using a sharp knife or mandolin and toss with 1 tbsp rice vinegar. Set aside to marinate.
  3. Chop scallion and mince ginger. Cut broccoli florets into bite size pieces.
  4. Toast sesame seeds in a toaster oven or in a small pan over low heat, shaking every minute. Remove from heat once they become fragrant, 2-3 minutes.
  5. Set a small pot of water to boil.
  6. While water boils, prepare the dressing: Blend carrot, .5 tablespoon ginger, 1 tablespoon rice vinegar, sesame oil, miso and 1 tablespoon water until very smooth, 1-2 minutes.
  7. Once water has reached a rolling boil, add broccoli and cook until bright green and still slightly tender, 4-5 minutes. Drain.                            
  8. Heat a skillet over medium-high heat and add Beyond Meat ground beef, scallion and remaining 1.5 tbsp ginger. Cook, breaking up pieces with a spatula to create crumbles, until meat is brown and crisp in parts and scallions and ginger are soft, 6-8 minutes.
  9. Mix chopped cilantro into the brown rice and spoon into a medium soup dish or bowl. Add marinated cabbage and browned beef on either side of rice, then nestle broccoli between the cabbage and meat. Garnish bowl with watermelon radish at center and sprinkle sesame seeds over all ingredients. Serve with carrot-miso dressing on the side or drizzle directly over the bowl.
