Jumbo crostini with eggplant paté, olives and sun-dried tomatoes

  • 2 slices FLAVIS Deli Style Bread
  • 5 oz (150 g) eggplant
  • ½ clove garlic
  • ½ lemon
  • ½ oz (10 g) sun-dried tomatoes
  • 1 tbsp (10 g) extra virgin olive oil
  • a few (5 g) pitted black olives
  • Dried oregano
  • Use salt according to your doctor’s advice

Method

1 Combine the sun-dried tomatoes with the oil, garlic, and oregano. Roughly chop the olives with a knife.

2 Leave the eggplant whole and roast in a preheated oven at 360°F (180°C) for at least 1 hour. Remove from the oven and leave to cool.

3 When the eggplant has cooled, put it on a chopping board, and remove as much flesh as possible using a spoon. Leave to drain in a fine-meshed sieve, pressing with a fork to remove the excess juices. Drain for at least 3 hours.

4 Once drained, place the eggplant in a blender with the lemon juice and salt. Start the blender and add the oil used for the tomatoes in a slow drizzle.

5 Chop the sun-dried tomatoes with a knife. Toast the bread and rub it with the clove of garlic used for the tomatoes.

6 Spread the hot bread with the eggplant paté, and top with the sundried tomatoes and olives. 

 

Cook's tip

The paté can be topped with grilled zucchini, mint and olives, or fresh cherry tomatoes marinated with basil and a little balsamic vinegar. Do not pierce the eggplant before roasting. Grill the bread for an extra special touch.
