Leftover Spaghetti Pie

Ingredients
  • Leftover Spaghetti 2 cups
  • Large Eggs 3
  • Almond Milk, Unsweetented 1 cup
  • Pepper 1/4 tsp
  • Salt 1/4 tsp
  • Mozzarella Cheese, Shredded 1/2 cup
  • GARNISH
  • Shaved Parmesan
  • Fresh Basil
  • Roasted Red Peppers, Finely Chopped
Preparation
12 servings/slices
  1. Preheat oven to 350 Degrees.
  2. In a large bowl add the eggs, almond milk, salt and pepper and whisk together.
  3. Chop up the spaghetti until it is around 1 inch pieces. Add to the egg mixture along with 1/4th cup of mozzarella cheese. Stir to combine.
  4. Pour the mixture into a 9 inch pie pan. Top with the remaining 1/4th cup mozzarella cheese. Bake for 60 minutes. Garnish with shaved parmesan, fresh basil and roasted red peppers.

Note: Any leftover spaghetti can be used in this recipe.
