Lemon Walnut Pesto Spaghetti

Ingredients
  • FlAVIS Spaghetti 1 Package
  • Olive oil 1/2 Cup
  • Lemon juice 1/4 Cup
  • Lemon Zest 1 Tsp
  • Basil 1 Cup (24g / 48 leaves)
  • Italian Parsley 1/4 Cup
  • Garlic 2 Cloves
  • Walnuts, unsalted 1/2 Cup
  • Parmesan cheese, grated 1/4 Cup
  • Salt 1/2 Tsp
  • Pepper 1/4 Tsp
  • Roasted Red bell Peppers, chopped 1/2 Cup
Preparation
Makes 10 servings (1 cup)
  1. Cook pasta according to package directions.
  2. Toast the walnuts in a dry skillet over medium heat stirring frequently for 2-3 minutes or until they start to become shiny, watching carefully so they do not burn. Remove from heat and set aside.
  3. In a food processor or blender combine the basil, parsley, garlic, lemon juice and zest, walnuts, parmesan cheese, salt and pepper and the olive oil. Process until the sauce is smooth.
  4. Add the pesto sauce to the cooked pasta along with the chopped roasted red peppers. Toss to combine and enjoy.

Prep Time:  5 minutes - Cook Time:  15 minutes - Total Time:  20 minutes
