
Lemon Walnut Pesto Spaghetti
Preparation
Makes 10 servings (1 cup)
- Cook pasta according to package directions.
- Toast the walnuts in a dry skillet over medium heat stirring frequently for 2-3 minutes or until they start to become shiny, watching carefully so they do not burn. Remove from heat and set aside.
- In a food processor or blender combine the basil, parsley, garlic, lemon juice and zest, walnuts, parmesan cheese, salt and pepper and the olive oil. Process until the sauce is smooth.
- Add the pesto sauce to the cooked pasta along with the chopped roasted red peppers. Toss to combine and enjoy.
