Mango Chicken Salad Sandwich

Ingredients
  • 3/4 cup Cooked Chicken Breast, Chopped
  • 1 1/4 cup Mango, Diced
  • 2 Tbsp Cilantro, Chopped
  • 2 Tbsp Red Onion, Diced
  • 1/8 Tsp Ground Turmeric
  • 1/4 Tsp Pepper
  • 1/4 Tsp Salt
  • 1/3 Cup Plain Low Fat Yogurt
  • 2 Tbsp Low Fat Mayonnaise
  • SANDWICH
  • 8 Slices Flavis Hearty Brown Bread
  • 2-3 Lettuce Leafs
Preparation
4 servings (1/2 cup)

Need to transform some leftover chicken into a new dish? Here is a simple and tasty meal idea where leftover chicken works great! Utilizing fresh mango, herbs and spices and yogurt is the basis for this easy chicken salad.

  1. In a medium bowl add all ingredients for the salad. Stir gently to combine until smooth and creamy.
  2. Add ½ cup of the chicken salad to bread, add lettuce slices and enjoy.
