Method
- Melt the butter and allow to cool.
- Separate the eggs. Put the yolks in a bowl and beat with a hand whisk, add the butter (cooled to room temperature) and the milk, whisking constantly.
- Add the baking powder to the Bread Mix and mix with the whisk.
- Beat the egg whites until stiff, adding the sugar a little at a time. When white and frothy, add to the Bread Mix, folding gently to prevent them from collapsing.
- Heat a large, non-stick pan over a medium heat and lightly grease with butter. Pour a ladleful of the batter on to the center of the pan without spreading it out. When the bottom is golden brown, turn it over and cook until golden.
- Serve with maple syrup.
Cook's tip
Do not add salt to the egg whites during the beating process. The eggs should be at room temperature, and not cold. Cake Mix can be used in place of the Bread Mix. If using the Cake Mix, omit the sugar to prevent the pancake from being too sweet.
