Potato, pumpkin and leek soup with Ditali pasta

  • 3 oz (90gr) FLAVIS Ditali
  • 5 oz (150gr) skinned and seeded pumpkin
  • 5 oz (150gr) potatoes
  • 3 1/2 oz (100gr) leek
  • 1/2 clove garlic
  • 1 spring of rosemary
  • 1 tbsp (15gr) extra virgin olive oil
  • Use salt according to your doctor’s advice

An ideal “contrast” to the cold of the season: a dish that heats up the body and spirit, thanks to the mix of vegetables that coexist in harmony.

Method

1 Remove the outer leaves of the leek, remove the dark green part and wash thoroughly. Cut the pumpkin into rough cubes and set aside. Finely chop the leek. 2 Heat the olive oil in a large saucepan, gently sauté the garlic, and remove when browned. Lower the heat and add the leek. Fry gently for three minutes, stirring constantly, then add the prepared pumpkin. 3 Cook over a low heat for approximately 7 minutes, until the pumpkin begins to break up. In the meantime, peel and chop the potato into 1-inch cubes. Then add it to the pan and cook for 5 minutes. 4 Add enough water or vegetable broth to cover the vegetables by about an inch and a half and cook over a medium flame for 20 minutes until the potatoes are tender. Add salt to taste. Blend the soup until smooth. Adjust the consistency as desired. Chop the rosemary. 5 Cook the Flavis Ditali in plenty of water according to the package instructions. Drain and add to the soup. Garnish with the chopped rosemary and a drizzle of raw extra virgin olive oil. Serve hot.

Cook's tip

Gently sauté half of a chopped and seeded chili pepper with the leek for a spicier finish that enhances the flavors of the dish. If the flavor of the leek is too strong, soak it in cold water before use, or use a large onion.
