Honey Mint Ricotta Toasts

Ingredients
  • Part Skim Ricotta Cheese 1/2 Cup
  • Fresh Mint, Finely Chopped 1 Tsp
  • Lemon Zest 1 Tsp
  • Honey 2 Tbsp
  • Granny Smith Apple, Thinly Sliced 1/2
  • Red Pear, Thinly Sliced 1/2
  • Flavis Hearty White Bread, Sliced in Half 7 Slices
  • Olive Oil Cooking Spray
  • Lemon Zest
Preparation
14 Toasts/7 Servings (2 pieces per serving)
  1. Heat oven to 425 Degrees.
  2. Cut the bread slices in half and place on a baking sheet. Spray both sides of bread with olive oil cooking spray. Place in a 425 degree oven and bake for 10 minutes or until toasty and golden brown.
  3. Meanwhile in a small bowl add the ricotta, mint, lemon zest and 1 tablespoon of honey. With a hand whisk stir till combined and smooth.
  4. Spoon the ricotta mixture onto the toasts. Top with the thinly sliced apples and pears and drizzle with the remaining 1 tablespoon of honey. Sprinkle additional lemon zest on top for garnish.
