Rigatoni with basil, green beans, and potato pesto

  • 1/4 oz (7 g) di FLAVIS Crostini
  • 5 oz (150 g) FLAVIS Rigatoni
  • 25 leaves of basil, approximately 1/2 oz (12 g)
  • 1 3/4 fl oz (50 g) extra virgin olive oil
  • 1 oz (30 g) green beans
  • 3 oz (75 g) potatoes (optional)
  • 1/2 clove garlic

Pesto, the great classic of Italian cuisine, in an interpretation that enhances the flavor of nature

Method

1 Wash and thoroughly dry the basil and place it in an blender with the crostini and peeled garlic. Turn on the blender and slowly drizzle in the oil until a creamy, pesto-like consistency is formed. Add salt to taste and place the pesto in the refrigerator, covering with cling wrap to prevent discoloration.

2 Bring a saucepan of salted water to the boil. Peel the potatoes and cut into approximately 2 cm/ 3/4-inch cubes. Wash the green beans and cut them to approximately the same size as the potatoes. Boil the potatoes and beans for two or three minutes.

3 Add the pasta and cook according to the package instructions. Drain and dress with the pesto, adding a little cooking water if too dry.

4 Serve warm or hot.

Cook's tip

To make the garlic more digestible, wrap it in aluminum foil and roast it in the oven for about 20 minutes. Avoid over-blending to prevent the basil from oxidizing and discoloring. Drizzle in the oil slowly to prevent the pesto from separating.
