Rigatoni with zucchini pesto and breadcrumbs

  • 6 1/2 oz (180 g) FLAVIS Rigatoni
  • 1/2 oz (15 g) FLAVIS Crostini
  • 5 oz (150 g) zucchini
  • 1 3/4 fl oz (50 g) extra virgin olive oil
  • A few leaves (5 g) parsley
  • 1/2 clove garlic
  • 5 fresh basil leaves
  • Use salt according to your doctor’s advice

A unique variation of traditional pesto that highlights the flavor of fresh, seasonal zucchini


Method

1 Wash the zucchini, leave it whole, and cook in boiling water for 5 minutes. Cool immediately in iced water for approximately 10 minutes. Drain, trim the ends and chop roughly.

2 Put the water on to boil to cook the pasta.

3 In a food processor, mix the crostini until they become fine breadcrumbs. Remove one half of the breadcrumbs and set aside. Wash the parsley, remove the leaves from the stems and dry well.

4 Heat 2 tablespoons of oil in a frying pan. When the oil is hot, add the reserved breadcrumbs and the parsley. Leave to cool.

5 Add the zucchini, salt and a 1/3 of the oil, the basil leaves (washed and dried), garlic and salt to the breadcrumbs in the food processor. With the food processor running, add the remaining oil in a slow drizzle until a creamy pesto-like consistency is formed. 

6 Cook the pasta according to the package instructions, drain, and dress with the pesto. Garnish with the fried breadcrumbs and parsley and serve.


Cook's tip

For an additional touch, add a diced tomato or two sun-dried tomatoes cut into strips to the mixture in the food processor. The pesto can also be served as a paté on toasted bread, or used as a dressing for a pasta salad, perhaps with cherry tomatoes, sweetcorn, and black olives.
