Side Salad with Garlic Parmesan Croutons and Creamy Blue Cheese Dressing

Ingredients
  • CROUTONS
  • Flavis Bread (White or Brown) 6 slices
  • Olive Oil 1/3 cup
  • Salt 1/8 tsp
  • Pepper 1/4 tsp
  • Garlic Powder 1/4 tsp
  • Oregano Leaves 1 tsp
  • Grated Parmesan Cheese 1 tbsp
  • DRESSING
  • Plain Whole Milk Yogurt 1/2 cup
  • Olive Oil 1 tbsp
  • Shallot, finely chopped 1 tbsp
  • Chives, Finely Chopped 1 tbsp
  • Salt 1/4 tsp
  • Pepper 1/8 tsp
  • Apple Cider Vinegar 1 tbsp
  • Water 1 tbsp
  • Blue Cheese, crumbled 2 tbsp
  • INDIVIDUAL SALAD
  • Romaine Lettuce 1/2 cup
  • Baby Kale Leaves 1/2 cup
  • Radish 1
  • Red Cabbage 1/4 cup
Preparation
8 servings
  1. Heat oven to 350 degrees.
  2. Cut the bread into 1 inch squares and place on a baking sheet.
  3. In a small bowl, combine the olive oil, salt and pepper, garlic powder, oregano and parmesan cheese. Whisk until thoroughly combined. Drizzle over the bread. Toss with your hands until all pieces of the bread are covered with the oil and seasonings.
  4. Make sure the bread is in a single layer and place in the oven. Cook for 10 to 15 minutes or until golden brown and hard to the touch.
  5. To make the dressing, in small bowl add the yogurt, olive oil, shallot, chives, blue cheese, vinegar, water and salt and pepper and whisk till thoroughly combined.
  6. Place the lettuce, kale, red cabbage and radish into individualized bowls. Add croutons and dressing and enjoy.
