  • 4 ounces Beyond Meat ground beef
  • ½ cup white or yellow onion onion, chopped
  • 4 shiitake mushrooms, chopped
  • ¼ pound fresh jicama (4 ounces)
  • ¼ pound carrot (about 1 large)
  • ¼ pound English cucumber (4 ounces)
  • 2 ounces vermicelli rice noodles
  • 16 8” rice paper wrappers (bahn trang)
  • 2 tablespoons fresh cilantro, chopped
  • ½ teaspoon fish sauce
  • ½ teaspoon fresh lime juice
  • ½ teaspoon granulated sugar
  • 1 clove garlic, finely grated
Preparation

  1. Chop onions, mushrooms and cilantro.
  2. Peel jicama and carrots. Julienne jicama, carrots and cucumber, aiming to have 32 2-inch long matchsticks of each vegetable, so you have two pieces per summer roll.
  3. Prepare noodles following package instructions. Most require soaking in boiling water for a few minutes to hydrate and then will need to be drained and rinsed.
  4. Prepare dipping sauce and set aside: finely grate garlic using a microplane (or chop very finely if you don’t have a microplane). Combine garlic with fish sauce, lime juice, sugar and 1 tsp water.
  5. Heat a skillet over medium heat and add Beyond Meat ground beef, onion and shiitake mushrooms. Use a spatula to break the beef up into crumbles as you would ground beef or scrambled eggs. Saute crumbles and vegetables for 6-8 minutes, until the ‘meat’ is browned and the vegetables are soft. Remove from heat.
  6. Fill a large saute pan with water and bring to a simmer, then turn off heat. Arrange all summer roll ingredients around a large cutting board so they are easily accessible: the sauteed ‘meat,’ julienned vegetables, hydrated rice noodles and cilantro should all be within reach.
  7. To assemble each roll, delicately dip the rice paper wrapper in the warm water for 1-2 seconds, just to get it entirely wet. Lay the rice paper wrapper flat on the cutting board at the center of your workstation and spoon 1-2 tablespoons of the sauteed meat mixture in the middle. Then lay 2 matchsticks each vegetable (6 total) and a small pinch of the noodles horizontally on top of the meat. Sprinkle a pinch of cilantro on top of the vegetables. Roll the wrapper by first folding the bottom (the part closest to you) up, then folding in the left and right sides in towards the center. Finally, roll the wrapper up from the bottom to seal in the filling. Complete until you’ve used up all rice paper wrappers. (note: depending on the stickiness of your rice paper wrapper and whether they’re sticking to your cutting board, you may find it helpful to very lightly grease your cutting board with a drop of canola or vegetable oil and then roll the wrappers on its oiled surface)
  8. Serve summer rolls with dipping sauce on the side.
