Ingredients
  • 5 oz (125 g) stale FLAVIS Hearty Bread or FLAVIS Crostini
  • 2 oz (50 g) red onion
  • 7 oz (200 g) ripe vine tomatoes
  • 1 1/2 tsp white wine vinegar
  • 7 fresh basil leaves
  • 3 oz (75 g) cucumber
  • 2 tbsp (20 g) extra virgin olive oil
  • Use salt according to your doctor’s advice

Method

1 Soak the bread or crostini in a bowl with the vinegar and water for 10 minutes.

2 In the meantime, wash the tomatoes and cut the flesh into 3/4 inch/2 cm pieces, discarding the seeds.

3 Peel the cucumber and cut into approximately 1/2 inch/1 cm cubes. Do the same with the onion.

4 Squeeze the excess liquid from the bread and add to the bowl with the other ingredients, mix gently, and add the oil and the basil. Salt to taste.

5 Serve cold. Cook's tip

Add other types of vegetables for variety, such as peppers, celery, and zucchini. The basil can be substituted with fresh mint for a touch of freshness. If the flavor of the onion is too strong, soak it in water for 10 minutes then drain before using.
