Yogurt and strawberry cheesecake with Frollini

  • 2 1/2 oz (70 g) FLAVIS Frollini
  • 8 1/2 fl oz (250 g) milk
  • 1 1/2 oz (40 g) butter
  • 1 1/2 tsp (7.5 g) brown sugar
  • 2 oz (60 g) yogurt
  • 1/2 tsp vanilla extract
  • 3 sheets gelatin, approximately 1/3 oz (10 g)
  • 1 1/2 oz (40 g) powdered sugar
  • 4 oz (100 g) strawberry jelly

Method

  1. Pulse the FLAVIS Frollini cookies in a food processor with the sugar. Melt the butter and mix it with the cookies and sugar using a spoon.
  2. Line a round 10 cm cake pan with baking parchment. Press the crumb mixture into the bottom of the pan to make the base. Place in the refrigerator.
  3. In a high saucepan, heat the milk over a medium heat with the powdered sugar.
  4. Open the vanilla pod along its length. Scrape out the seeds using a knife and add them to the milk.
  5. Soak the gelatin in cold water until it softens, then wring gently to remove the excess water. Just before the milk boils, add the gelatin and pour the mixture into a basin. Leave to cool.
  6. When the mixture is lukewarm, add the yogurt, mix with a whisk and pour over the cookie crust. Leave to set in the refrigerator for at least 10 hours. Remove from the refrigerator, spread the strawberry jelly over the top, and return to the refrigerator for another couple of hours before serving.

 

Cook's tip

Instead of the jelly, try topping with a chocolate sauce, made from 1 1/2 fl oz (40 g) of water, 1/2 oz (15 g) powdered cocoa, and 1 oz (30 g) of sugar. To prepare the chocolate topping, whisk the sugar and cocoa in a small saucepan, gradually adding the cold water. Cook over a low flame for approximately 2 minutes to thicken, stirring constantly. Transfer the mixture to a bowl and allow to cool.
